I am kind of a popsicle fanatic. Granted, I don’t make them like this very often, but there are always a handful of otter pops in our freezer. If you remember last summer, I shared this frozen coconut limeade and it is seriously one of my favorite drinks that I’ve ever made. I’ve had it numerous times in the last year and last week, on a particularly warm day, I thought it might be fun to turn the recipe into one for popsicles! It worked like a charm.
Lime Coconut Popsicles
Makes about 14 popsicles
Ingredients:
- 5/8 cup Coco Lopez cream of coconut
- 4 Tbsp. limeade concentrate
- 3 cups water
- 1/2 cup coconut {optional}
Directions:
- Mix all ingredients together in a medium sized bowl.
- Pour into popsicle molds and freeze.
- Once set, remove and enjoy.
I hope these do the trick in cooling you off in these summer months! They sure have helped us in this no A/C house. Enjoy!
