Do you guys have any idea how many times I’ve tried making homemade fries? I only like to fry foods on rare occasions, so I’ve been on the hunt for literally years now to try to find the perfect technique for baking them. The main requirements have been that they have to taste good {duh}, they have to be crispy, and they have to be easy to get off the pan. {There’s nothing I can’t stand more than having delicious looking fries be completely demolished because they have a death grip on your baking sheet.} After many failed attempts, I’m happy to say that I’ve finally found the perfect technique. And holy crap does it make some delicious fries! I’m going to be using this recipe for years to come.
Recipe from Annie’s EatsServes about 4Ingredients:
- 3 russet potatoes {about 24 oz. total} peeled and cut lengthwise into even pieces
- 5 Tbsp. vegetable oil, divided {peanut or canola oil will work great too!}
- 3/4 tsp. salt, plus more to taste
- 1/4 tsp. black pepper, plus more to taste
- 1 tsp. Lowry’s seasoned salt, plus more to taste {optional}
Directions:
- Preheat oven to 375°F.
- Place potatoes in a large mixing bowl and cover with hot water; let soak for 30 minutes.
- Place 4 Tbsp. of the oil in a baking sheet and tilt it back and forth until it is evenly coated.
- Sprinkle the pan evenly with the salt, pepper, and Lowry’s salt and set aside.
- Drain the potatoes and pat with a towel until dry.
- Place the potatoes back in the bowl {dry it out first} and coat with the remaining Tbsp. of oil.
- Place the potatoes on the baking sheet in a single layer.
- Cover tightly with foil and bake for 5 minutes.
- Remove the foil and continue baking for 15-20 minutes until the potatoes are spotty brown, rotating the baking sheet after 10 minutes.
- With a spatula, flip potatoes, making sure to keep them in a single layer.
- Continue baking for another 10-15 minutes until potatoes are crisp and golden.
- If needed, add additional salt and pepper and serve warm.
Being from Utah, I basically grew up on what is called ‘fry sauce’. If you haven’t tried it, you need to right now. Just mix one part ketchup to one part mayo, stir well, and dip your fries. It will change your life.

This is a great way to oven bake fries and they do come out yummy, I’ve been doing this for years except not with the foil. What exactly is the purpose of having it on there for 5 min? Great recipe 🙂 and yes fry sauce is awesome!! Try adding just a few drops (to taste anyway) of sweet pickle relish juice, this is what we always do to make it taste more like the sauce at the Arctic Circle Hamburger chain 🙂

OH WOW! I cannot wait to try these! I deep fry foods once a year, or less–so we often are stuck with store bought frozen fries… I do believe I will attempt to add these to my list of freeze ahead side dishes!!

I worked at a local hot dog place and we hand cut our own fries every day and then soak them overnight (in the walk-in) in water and vinegar, best fries ever! 🙂 I do that with my oven baked fries but I generally only soak them for a few hours.
