This Green Beans, Chicken, and Potatoes “One Pan Wonder” will change your dinner life as you know it. Throw it all in a pan, bake it, and you have a balanced, delicious meal that your family will love!
I’m not a planner. I never have been. In fact, for my birthday one year, my friend actually gave me a planner because she knew I couldn’t remember events or follow a schedule worth a darn. Which makes things hard as a wife when it comes to planning dinners. I can’t even count the number of times that we’ve eaten cereal for dinner because I didn’t have a game plan on what to make or we didn’t have the ingredients for something worthwhile. Don’t get me wrong, we love cereal in our house {almost too much}, but I don’t think it’d be a very motherly thing to do – feeding my kids sugary crap all day long. {Because yes – we are a sugar cereal kind of family. None of that Fiber One nonsense that tastes like food you would feed a horse.}
So, here I am. I’m turning over a new leaf. My goal is to plan out a dinner menu every week. At least I’m going to try to anyway. The thing with me and planning though, is that I like things to be easy. I don’t want to be slaving in the kitchen for 3 hours just for something that is going to be eaten in ten minutes! That’s where this delicious meal comes in. You literally cook everything together. In one pan. {Hence the ‘One Pan Wonder’ title} And it actually tastes freaking good! Call me lazy or whatever you’d like, but there aren’t many things that make me feel more proud than putting in little effort and getting a quality result in return. This is one of those things. Promise me that you’ll try this meal at least once. I have a feeling it will become your new best friend. 😉

Green Beans, Chicken, and Potatoes "One Pan Wonder"
Ingredients
- 12 oz. green beans
- 1 lb. chicken breasts diced
- 1 lb. red potatoes chopped
- 1/2 cup butter {I use salted}
- 0.6 ounce Zesty Italian seasoning packet
- Salt and pepper
Instructions

Preheat oven to 350ºF.

Layer your green beans, chicken, and potatoes in a 9x13 inch baking dish as seen above.

Cut your butter into 12-16 slices and spread evenly atop the veggies and chicken.

Sprinkle the Italian seasoning packet evenly over the beans, chicken, and potatoes and top with salt and pepper, to taste.

Bake, uncovered, for 1 hour, until chicken is no longer pink and potatoes are soft. {If your beans start to get too cooked at about the 45 minute mark, place foil over the pan.}

I’ve had bad experiences in the past freezing potatoes… They turn out all mushy. But, it’s worth a shot!

What you need to do cook it first and what I like to do with it is divide it up and it individual servings and freeze it. And then when you ready to reheat it put it in the microwave on high for three minutes and then stir it up and put it in back microwave for one minute that Should be it. Then I have to do is stir it up and eat it. I do that I do this all the time and always turns out good for me.

Hey Danielle. I actually used fresh green beans. Sorry I didn’t specify that better! You could probably use frozen ones too, but I think if you used canned, they’d turn into a big pile of mush. 🙁

Yes put on tin foil on it for about 45 to 50 mins then Take it off and cook it for next year 10 or 15 minutes. That should do it. Hope it turns out good for you so I’m gonna make it tonight.

Chicken could have used more flavor. I added chicken broth to give it a tad bit more flavor but my chicken had a bit of a boiled chicken taste to it. I also added corn and mushrooms.the veggies all had plenty of flavor. May should have used 2 packets of Italian seasoning.

I LOVE one-pan meals! The first time I made this I was a little disappointed – the potatoes were still a bit firm and the chicken pieces had all melded together in a sort of dry mass. Good flavor, though! I made it again tonight, doubling the recipe so I could give some away. This time, I cut the chicken into small strips, and decided to stir them up a couple times during the cooking process so they would separate. After an hour, the chicken and green beans look good, but the potatoes that I cooked in an aluminum pan were still firm. Decided to put them back in at a higher temp. I did the second version in a glass pan with a ground beef mixture in the middle instead of the chicken, and all the contents look great. I think a glass pan conducts the heat really well. Just my two cents’!

I’ve had this pinned for awhile and finally got around to trying it tonight. So glad I did! I made two pans (for a family of 6) and EVERYONE loved it. The only thing I did slightly different was to substitute a homemade Italian dressing mix for the envelope of Italian dressing. I baked it covered for 45 minutes and then uncovered for another 20 or so. I’m going to play around with freezing it and I’ll update with the results. I’m going to add this to our regular dinner rotation. Thanks for a great recipe!

Hey! I want to say yes, but my only hesitation would be that the chicken might cook at a different pace than with the frozen veggies. I say give it a try and if you need to take one or the other out first, then you’ll know for next time. Hope you like it! 🙂

Oh my gosh! I made this the night I got the recipe. I used fresh green beans and because it’s what we have I used Ukon Gold potatoes and one packet of Good Seasons Italian dressing. The smell in the house was amazing and I was salivating waiting for it to come out! Mom and I ate quite a bit of it with leftovers. My dad is on a feeding tube and he can only eat certain foods. He can’t eat chicken because he always says its tough but he could eat the beans and potatoes because they were so soft. He loved that part of it. Mom had one complaint though and we fixed it the next time I made it. She said we needed more salad dressing so I added 2 packets the next time when I made it for my nephew and I. My nephew loved it too! This one is definitely a keeper! Thank you so much for this recipe!

I made this last night. I used fresh asparagus instead of the green beans. I also covered it for the entire time. It turned out amazing!! Everything was perfectly cooked, had just the right amount of seasoning. I actually had no left overs last night, which is very rare in my house.

Hi Misha! Do you have Ranch dressing season packets over there? Those work great too. Also, white potatoes are just fine as well! As for the frozen beans, I’ve never tried it before, but it may work since they will take a bit to thaw out and will then be cooked fine with everything else. I would give it a try or maybe omit the green beans and use fresh broccoli instead? Good luck!

Used sweet potatoes and frozen broccoli instead of red potatoes and beans. Also had to make my own Italian seasoning mix…no big deal. Everything turned out just fine!

Just made this tonight exactly as the recipe calls with red potatoes and fresh green beans… It was amazing! Definitely enough flavor and my husband has not stopped saying how much he liked it. My 9 month old even devoured it! I did cook for 45 minutes covered to be sure the potatoes would cook and removed the foil for the remaining 15 minutes. This was delicious and love only one pan! I make this in 3 pans – each ingredient in its own pan – and use ranch seasoning instead of Italian. There is never a single bean (fresh not canned) or potatoe left! It’s in the oven right now, trying out coconut oil instead of butter. Fingers crossed it’s just as good!

Hi Sarah your recipe is in my Oven now, cant wait to try it, with humid Summer evenings One Sheet Baking is the way to go, its too sticky out! The house smells awesome. I used Chicken breast filet, chopped up, just as you pictured with red potatoes 1 pound exact and 16 ounce fresh green beans.. I did not have Zesty Italian packet so used a layer of each ingredient, Sweet basil, Oregano, onion garlic, paprika,Thyme, salt n Pepper with a dash a sugar mixed in. I was hesitant about the butter salted so went with Unsalted and added Parmesan Cheese to the top !Its looking awesome Thank you!
