I’m not a big pie fan. Personally, I don’t think fruit was meant to be cooked. I can’t stand it when it’s warm and mushy, which means that pie and I? We don’t get along very well. The only kinds of pie I enjoy are pumpkin, banana cream, coconut cream, and one of my personal favs – pecan pie. It’s like an explosion of caramely, sugary, yumminess. That’s why when Zachary and I got a taste of these pecan pie truffles, we were instantly hooked. I had to give most of them away or I would have eaten all of them. You will love them, I promise.
Pecan Pie Truffles

- 3/8 cup corn syrup
- 1 & 1/2 tsp. vanilla
- 16 oz. dipping chocolate {I use Candiquik}
Directions:
- In a medium bowl, combine together 2 & 1/4 cup pecans, graham cracker crumbs, brown sugar and salt.
- Add maple syrup, corn syrup and vanilla and mix thoroughly.
- Refrigerate mixture for 15 minutes.
- Line a cookie sheet with wax paper.
- Roll mixture into 1 inch balls and place on wax paper; let truffles refrigerate for 30 minutes.
- Melt the dipping chocolate according to package directions.
- Coat the truffles with chocolate and return back to wax paper.
- Sprinkle some pecans on top of the truffles before the chocolate hardens.
- Once chocolate hardens, serve and enjoy.

I recently found an eggless pecan pie recipe. I am excited to find this now. It’s another way to bring him joy with the desert his missed for so long!

How did you get your chocolate coating so smooth. These look AMAZING!
Sarah Averett says
Make sure to let it sit in the fridge for the time described. In the past, if I don’t, it seizes up a little.

I had a hard time forming it into balls because it was crumbly. Do you have this issue?
Zachary and Sarah @ HHG says
Well that’s frustrating! I’ve had that problem before when I didn’t let it sit in the fridge long enough. You could also try adding a little more corn syrup!

You can use either. However, we used light corn syrup.
