To kick off this week of awesome guest posters, we have Wanda from Memories by the Mile with some delicious looking Chocolate Almond Joy Cookies! I love Almond Joys. So these are just calling my name. Take it away Wanda!
I’m so excited to be a guest here at High Heels & Grills.
Let me introduce myself. I’m Wanda Ann from Memories by the Mile. At my
blog I share yummy recipes, which are mostly family favorites, but all delicious. I
also share about the many miles I travel with my best friend, who happens to be my amazing husband. This year we have been featuring a different state called Tuesday Trivia that has been lots of fun. I hope you’ll come by and say hi.
Today I’m sharing with you a favorite recipe of ours, Chocolate Almond Joy Cookies. This recipe is great for the coming holiday season because it makes plenty for company or neighborhood gift plates. Their moist, chocolaty, nutty and oh so yummy.
Chocolate Almond Joy Cookies
Makes 6 dozen
Ingredients:
- 1 cup softened butter
- 1 1/2 cups sugar
- 1 1/2 cups brown sugar
- 4 eggs
- 3 teas. vanilla
- 4 1/2 cups flour
- 2 teas. baking soda
- 1 teas. salt
- 4 cups chocolate chips
- 2 cups chopped almonds
- 2 cups coconut
Directions:
- Pre-heat oven to 375*
- Lightly grease cookie sheet or line with Silpat Baking Mat .
- Combine dry ingredients and set aside.
- In a mixing bowl combine first 5 ingredients and mix. It best to use room temperature eggs and add them one at a time.
- Add dry ingredients slowly and mix well.
- Stir in chocolate chips, almonds, and coconut.
- Use ice scoop to drop dough onto cookie sheet and bake for 8-10 minutes.
- Remove and place on rack.
