With the holiday season being in full force, I noticed that our local grocery store was stocking up on cranberries. Not cranberry sauce or dried cranberries {or craisins rather}, but full on cranberries. I realized that I had never eaten a cranberry just plain before. Like, ever. I didn’t even know how to eat them plain! Sounds weird, right? But chances are, you just realized the same thing too, huh? 😉 Anyway, because of all of this, I looked up how to eat cranberries and every site said the same thing – cranberries are edible, but they are very bitter/sour. I thought to myself, “Well, I like sour things. They can’t be that bad”, as I popped a couple in my mouth. Trust me when I say that they were that bad. I don’t know why they would even sell the dang things unless it was for this recipe right here. Because let me tell you – these babies are delicious! They make those bitter/sour cranberries taste like something straight outta heaven.
White Chocolate Covered Cranberries
Makes 12 oz. white chocolate cranberries
Ingredients:
- 16 oz. dipping white chocolate {I used Candiquik}
- 12 oz. bag cranberries
Directions:
- Melt chocolate according to package directions.
- Dip cranberries into the chocolate with a fork and let the excess run off.
- Place on wax paper and let chocolate harden.
Super easy, right? And yet they’re pretty and delicious!

I love the way these look, and they seem like the perfect thing to nibble on–not too sweet, but the chocolate would offset the tartness of the cranberry.

I have had these before and they are good. The mother of an old boyfriend of mine made these every Christmas but she made some in white chocolate and some in milk chocolate. I think dark chocolate would be really good too. Thanks for sharing 🙂

It looks beautiful but cranberries are so sour bitter that it’s hard to believe that coating in white chocolate would be enough to make them edible. I don’t think I’ll take a chance on this one 🙂

I always buy several bags at Christmas time and freeze them. I used a handful or two to put into fruit smoothies. The bitterness is masked by all the other fruits etc. YUM! With chocolate, however, would be the best!

That’s awesome! A lot of people think these would be gross because cranberries are so bitter. I don’t think they realize that you just need a little sweetness to take care of that! They taste so good. 🙂

I made these last year for my husband to take to his Christmas party at work. He said they were gone very, very fast. In fact, they were the first treat that ran out. People just loved them. I was shocked. That was the first time I had made them. I wasn’t even sure if people would care for them and debated upon sending them with him. So glad they were a huge hit! You can bet I’ll be making them again this year. They are waiting for me in the refrigerator. Time to get at it!

That is awesome! I’m so glad you told me this, because I’ve had a lot of flack for this recipe with people saying it’s crazy and not to even try it. I was seriously shocked by how good they were too when I first tried them. You would never guess that you’d WANT to eat raw cranberries, but this combo is addicting! I have a mini muffin tin. Could I put like maybe 2 or 3 cranberrires in each cup and pour melted white chocolate over them? Chill and then pop them out.

My grandmother used to make these with milk chocolate, but she poked a few holes in them and soaked them in 7up the night before dipping to sweeten the berry and give it more crunch.

I put two or three on a toothpick and dip in the melted white chocolate then put on wax paper to let harden. Am I doing something wrong?

I wouldn’t put them on a toothpick. I melt the chocolate in a bowl and then put 3-5 cranberries in at a time. I cover them completely with chocolate and then use a fork to retrieve them, since the extra chocolate can fall through the prongs, and I put them on wax paper to harden. Don’t puncture them though because then you’re battling the juice with the chocolate. Good luck! Let me know if you have more questions.
