These Deep Dish Fudgy Oatmeal Bars have a fudge center, sandwiched between two oatmeal layers. They taste incredible and have an amazing texture! They’re one of my top five favorite desserts I’ve ever had.
You guys. I’m pretty sure that I’ve ranted and raved about more recipes on this blog than I care to admit. Can you blame me though? I’m not going to post a bad recipe, right? You pickin’ up what I’m puttin’ down?
Because I’ve said so many good things about all of the different recipes here, it’s hard to truly tell you which ones are good and which ones are goooooood. But I am here to tell you that these Deep Dish Fudgy Oatmeal Bars are goooooood. Like, so good that I am now paying for it with a bellyache right now because I ate so much. I’m not proud of it, but it’s the truth.
Deep Dish Fudgy Oatmeal Bars
Ingredients
- Cookie:
- 1 cup {2 sticks} salted butter softened
- 2 cups light brown sugar
- 2 large eggs
- 2 tsp. vanilla
- 1/3 cup milk {I use 1% but any kind will work}
- 2 & 1/2 cups all-purpose flour
- 3 cups old-fashioned oats
- 1 tsp. baking soda
- 1 tsp. salt

- Fudge:
- 1 {14 oz.} can Eagle brand sweetened condensed milk
- 1 {12 oz.} bag milk chocolate chips
- 1/3 cup salted butter
- 1 tsp. vanilla extract
Instructions

Preheat oven to 350°F and grease a 9x13 inch nonstick pan.

In a medium bowl, combine the butter, brown sugar and eggs and mix well. Add the vanilla and milk and incorporate well.

In a medium, separate bowl, combine the flour, oats, baking soda, and salt. Add the dry ingredients to the wet ingredients and mix well. Spread 2/3 of the mixture into the pan and set aside.

In a medium saucepan, combine all of the ingredients for the fudge and let melt completely over medium heat. Once melted, pour over the prepared cookie mixture.

Drop spoonfuls of the remaining cookie dough over the top of the fudge. It won't cover it completely, but will make for a pretty top.

Place in oven and bake for 25 minutes. If the top is getting browned after 15 minutes, cover with foil. Let cool completely, so the insides don't run everywhere.

could I possibly substitute regular milk in making the fudge, instead of condensed, or possibly coconut milk?

Unfortunately, I don’t think either of those will work. The sweetened condensed milk is important for the texture and integrity of the fudge. Sorry!

When you pull them from oven after 25 min, does the mixture set up after? I don’t want to overbake, but it feels slushy and it moves more like a cake mix just set in oven than a firm cookie bar.

Sorry I didn’t get back to you sooner! It should set up, but every oven is different and could cook at different speeds. You may need to leave it in a little longer. Did you already make it? How did it turn out??

Hello! Years late on this response but figured someone may come along behind me here. When I pulled mine out of the oven at 25 minutes it definitely looked almost sloshy. I was nervous to have it be raw so I left it in for 5 more. It still moved at that point but I just went with it. It’s totally cooled now and definitely done underneath. The fudge just makes it look sloshy when it’s still hot. Mine probably would’ve been fine at 25 min like the recipe recommends.

Generally, quick oats can be substituted for old fashioned in recipes like this, but I have never tried it and don’t want it to turn out wrong for you! You can definitely try it, but I would advise sticking with old fashioned. 🙂

I found this recipe on Pinterest a couple months ago and I have now made it four different times… These things are addicting!!! And my whole family is in love with them too! The first time I made them I thought I cooked them for too long but after they completely cooled off they were perfect! I actually prefer mine the next day after they’ve been in the fridge all night. Omg this recipe is the bomb. Next time I will have to make the top crumble a little thinner as it was still a little too gooey….but delish! Or next time bake a little longer. Do you think you could freeze this?

I made them today but on the cookie party I added 1/2 cup of milk instead of 1/3 cup of milk. On the fudge I added 1/2 cup of butter instead of 1/2 cup could not read the small print at first and made the mistake. They are cooling now will they setup?
