This is our favorite Piña Colada recipe. It’s smooth and creamy and made with coconut milk instead of coconut extract or cream of coconut. It is a great drink recipe to make on a warm summer day!
I am a total sucker for a good virgin piña colada. We went on a Caribbean cruise two years ago and let’s just say that a good chunk of our play money went towards virgin piña coladas. There’s something about them that makes you feel carefree and relaxed while drinking them!
I have made them before with the Coco Lopez Cream of Coconut that everybody rants and raves about and as great as that stuff is, like in our Frozen Coconut Limeade, it wasn’t very fitting for a Virgin Piña Colada. It’s too sweet. I wanted a recipe that uses coconut milk instead and tastes like an authentic Piña Colada and this recipe is it. I have a feeling that with the warmer weather that is headed our way {YAY!}, I’m going to be making a lot of these here soon. Enjoy!

Virgin Piña Colada
Ingredients
- 1 cup pineapple juice
- 1 cup canned coconut milk {I use full fat}
- 1/4 cup granulated sugar
- 1/4 cup heavy whipping cream
- 1 tsp. vanilla extract
- 8 cups cubed ice
Instructions

Place all ingredients in blender and blend until smooth.

I LOVE PINA COLADAS, as well! I just wanted to say is that instead of using brown sugar or granulated sugar, replace that with bananas!

Mmmmm. Coconut milk, coconut cream…any way you make it, pina coladas are my faaaaavorite cocktails! I like the idea of lightening it up with milk and no rum, though, as more of a summery breakfast smoothie, almost. Looks super tasty!

Hey if I also add pineapple chunks to your recipe, will it change it dramatically? Like possibly make it way too pineappley lol, or could I just replace the juice with the chunks?

I think you should use frozen pineapple pieces so the drink doesn’t dilute.
