This Roasted Garlic and Parmesan Hummus has a strong garlic taste, with just a hint of parmesan. It is great for dipping veggies, tortilla chips, pita chips, and pretzels. Makes for a great appetizer at parties or just a side dish for dinner!
I am really having way too much fun with my Blendtec, guys. First, Skinny Raspberry Frozen Yogurt, then Bananas Foster Frappes, and now this amazing Roasted Garlic Parmesan Hummus. I just can’t stop! Nor do I want to. I just hope you guys don’t get sick of blender recipes anytime soon, because I have a feeling that they aren’t going to slow down quite yet. #sorrynotsorry
This was my first time making hummus and I must say that I’m surprised at how easy it is and how much better it tastes than the kind you buy at the store. In fact, I’m wondering why anybody buys it at the store these days, with how ridiculously easy it is to make at home. Especially if you cheat like me and use canned chickpeas. Don’t judge. Sometimes, you need a snack and you need it now. I don’t have the patience to wait 2 days for fresh chickpeas to be ready! I do want to try it one day though. You’ll be the first to know when I do. 😉
One of my favorite things about hummus {besides its deliciousness and the fact that it is packed with protein and fiber} is how many different things go well with it. Vegetables, tortilla chips, pita crackers, pretzels, you name it.
In fact, I use hummus as a tool against Addi, quite frequently, to get her to eat vegetables. She loves it with broccoli and tortilla chips the most, but will also eat carrots, peas, and peppers with it too. Hummus is one of those snacks that I can give to her and walk away feeling like a rocking mom, because she eats it so well and it’s super good for her.
My one and only gripe with hummus though, is how stinking messy it can be in little toddler hands. Every time Addi eats it, you can guarantee it will be all over her face, hands, clothes, hair, etc. I feel like I have to change her clothes and bathe her after every time she eats it, which is a huge deterrent to giving it to her at all. So annoying. We tried out a new bib from Dabbling Duck Boutique, while snacking on it this week, and I’m pretty sure I’m going to need about 5 more of these babies.
They’re all handmade, super cute and stylish, but more importantly – they’re completely functional! Here are a few of my favorite features:
1 – They have little sleeves that help keep food off your kid’s clothes.
2 – The neckline comes up high enough that it will catch that extra drool that always comes when a toddler eats, again preventing the clothes from getting messy.
3 – It ties in the back, so your child can’t rip it off. {Biggest pet peeve ever!}
4 – It’s made of super soft fabric, so it doesn’t rub uncomfortably!

Roasted Garlic and Parmesan Hummus
Ingredients
- 1 large head garlic roasted {Click here for roasting instructions}
- 2 cups canned chickpeas drained and rinsed
- 1/4 cup fresh parmesan grated
- 2 tablespoons tahini
- 5 tablespoons olive oil
- 1 ⁄4 cup warm water
- Juice of 1 small lemon
- 1 ⁄2 teaspoon sea salt
- {Optional} Paprika for garnish
Instructions

Squeeze the garlic cloves out of its shell into a food processor.

Add the rest of the ingredients to the food processor and blend until completely smooth.

Scrape down sides, as needed, and then continue blending to make sure all of the ingredients are blended evenly. If hummus is too thick, add extra olive oil, 1 tsp. at a time, and blend in between additions.

Sprinkle paprika over hummus and serve with vegetables, crackers, or pretzels.
