Have you ever made peanut brittle? I’ll be honest – I’ve been a little too intimidated to try it before now. It always seemed to be such a delicate recipe that I didn’t even want to bother. That is, until I found this Microwave Peanut Brittle recipe!
You really can make it in ten minutes or less. Ten minutes! It takes me longer than that to drag my butt out of bed some mornings. You can’t beat that – little time in the kitchen with one huge reward. Add a little popcorn in there, and you’ve got your very own homemade Poppycock!

Microwave Peanut Brittle
Microwave Peanut Brittle comes together easily and makes for a sweet snack any time of the year!
Ingredients
- 1 cup sugar
- 1/2 cup light corn syrup
- 1/8 tsp. salt
- 1 cup roasted, salted peanuts
- 1 Tbsp. butter I use salted
- 1 tsp. vanilla
- 1 tsp. baking soda
Instructions

Grease a 9x13 inch baking dish and set aside

Combine the sugar, corn syrup, and salt in a medium, microwave-safe bowl.

Microwave on high for 4 minutes.

Stir in the peanuts.

Microwave another 3 minutes, stirring every minute, until the syrup is lightly browned.

Add the butter, vanilla, and baking soda to the syrup mixture and stir until light and foamy.

Spread to 1/4" thickness in pan.

Let cool and then break into pieces.
I’m not sure why, but my mind has always associated peanut brittle with Christmas. I guess I know what’s going in our Christmas neighborhood goodie bags this year! 😉
