This Biscoff Pie is decadent and delicious! It is a fairly easy dessert to throw together for Pie Day and you’ll definitely want seconds!
Happy Pi{e} Day!! I can’t be the only math nerd here that gets what Pi Day is, right?? You know – pi ~ 3.14159265…blah blah blah and today is 3/14! Glad we’re all on the same page here. I was browsing pie recipes that seemed appealing the other day and I came across this delightful looking Biscoff pie! Confession: up until a few months ago, I had no idea what Biscoff was. I remember going to the store with my sister-in-laws and one of them {Nikki} was searching everywhere for Biscoff. I didn’t get what the big deal was until she went home and whipped up these Biscoff No Bake Cookies. Holy amazing! I am now a Biscoff fanatic. This Biscoff Pie right here has officially converted my husband to the awesomeness that is Biscoff as well. It’s delicous!
I’m taking this bad boy to work today and I’m so excited! I love that there’s a day that we can eat pie and not feel bad about it. After all, we have to celebrate right?
Biscoff Pie
Ingredients
Crust
- 8.8 oz package Biscoff cookies crushed
- 1/4 cup salted butter melted
Filling
- 1 cup heavy whipping cream
- 1 cup Biscoff spread
- 4 oz. cream cheese softened
- 1 cup powdered sugar
- 1 tsp. vanilla
- 14 oz can sweetened condensed milk
Toppings
- 1 cup whipping cream
- 4 Biscoff cookies finely crumbled
- 1/4 cup Biscoff spread melted
Instructions
Crust

In a medium bowl, mix the Biscoff cookie crumbs and the melted butter until well combined.

Press the mixture into the bottom and sides of a 9-inch pie pan.

Refrigerate while preparing filling.
Filling

With an electric mixer, beat the whipping cream on medium high until stiff peaks form. Set aside.

In a large mixing bowl, combine the cream cheese and Biscoff spread and beat on medium with an electric mixer until light and fluffy.

Reduce speed to low and slowly add the powdered sugar.

Add the vanilla and sweetened condensed milk and beat until smooth.

Fold the prepared whipped cream into the cream cheese mixture until fully combined.

Pour the filling into the Biscoff cookie crust and smooth over. Set aside.
Toppings

Beat the whipping cream in a medium bowl with an electric mixer until stiff peaks form.

Pipe the whipped cream with a star tip or spread evenly over the pie filling.

Sprinkle with cookie crumbs and drizzle with melted Biscoff spread.

I first found Biscoff when I lived in Belgium and had to bring tons back with me because it wasn’t over here yet. I’m so glad I can find them even at Walmart now. This looks amazing and I think I’m going to have to try this!! Thanks for sharing
