Guys. I have a recipe that is going to change your life. Literally. I have been on a serious cupcake kick lately. I made these cute Easter cupcakes a few weeks ago and if you follow me in Instagram, you’ve surely seen the other cupcake projects I’ve been up to. I have to let you in on a little secret to my cupcakes – very rarely do I make them from scratch. If you’ve tried your hand at cake making, I’m sure you’ve found that after adding together about 15 different ingredients, it’s worth it to ya just to buy a box mix, add some oil, water, and eggs, and you’re set. At least that’s how I feel!
Well, in all of my box cupcake making experiences, I’ve paired my cupcakes with this frosting and the results have been amazing! Seriously. I’ve had so many people tell me that they never would have guessed the cupcakes were made from a box mix and that it is the best frosting they’ve ever had. A ton of people have asked me for the recipe and when I took some cupcakes to my Sunday School kids, one of them exclaimed, “How the heck did you make those? Those are the best cupcakes ever!” He was nine. I felt pretty proud.
I thought it would only be right to share this recipe with you, so you could feel the joy of making something amazing and yet super simple!
Ingredients:
- 2 {8 oz.) pkgs. cream cheese
- 1 cup {2 sticks} salted butter
- 1 tsp. vanilla
- 4 cups powdered sugar
- Food coloring {optional}
- Unwrap cream cheese and heat on a small plate in microwave for 30 seconds. {When you take it out, it should want to slide off the plate if you tip it sideways.}
- Beat cream cheese in a mixer until nice and smooth.
- Keep butter in the wrapper and place directly in microwave, heating for 28 seconds, flipping to a different side every seven seconds. {I know this all seems really tedious, but trust me – it’s the trick to getting smooth and creamy frosting!}
- Add softened butter to cream cheese and mix until smooth.
- Add vanilla and mix.
- Add powdered sugar, 1 cup at a time until fully incorporated.
- Add desired amount of food coloring.
I can’t wait to try this frosting out!!

Of course this is perfect, it includes cream cheese! š I heart cream cheese frosting on almost everything. The other day I had some left over from cinnamon rolls and my husband had it on his pancakes for breakfast. Yummy!

How many cupcakes should this cover?
I would honestly say that it’ll cover about 40 cupcakes. I made it the other day and halved it and it covered my 15 cupcakes and there was even more left over. I hope this helps! Good luck š

4 cups of SIFTED powdered sugar or is it not necessary?

I made a test batch before my nieces birthday. The frosting was amazing. Lots of compliments on it. My frosting was not very thick. What did I do wrong? When I piped it on the cupcakes it was very soft. HELP!!!
Do the cupcakes have to be refridgerated after I frost them? How long will they last?
