Our cute girl has slept 8 hours + for the last three nights. Two nights ago it was even 9 and 1/2! It’s been pretty magical. The only flaw in this momentus occasion is that she’s ready to go to sleep at like 8 o’clock. I’m a full blown night owl and I have a really hard time getting myself to go to bed at 8. So, while she has been sleeping really well, she wakes up at like 5 am and is ready to stay awake. That doesn’t mesh very well when I’ve stayed up later than her to hang out or get things done. Let’s just say I feel like I’ve been hit by a train right now.
Anyway, why am I telling you all of this? Because I don’t have a lot of things to do at 5 in the morning, so I thought I’d share this lovely recipe for Blueberry Crumb Cake. You’re welcome. It’s delicious. This recipe has a little bit of lemon in it as well, which you can definitely taste and I think it gives it the perfect zing of flavor!
Blueberry Crumb Bars
Makes 1 – 9×13 inch pan
Ingredients:
- 1 cup white sugar
- 3 cups all-purpose flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- Zest and juice of 1 lemon
- 1 cup butter, cold
- 1 egg
- 1/2 cup white sugar
- 4 tsp. cornstarch
- 4 cups fresh blueberries
Directions:
- Preheat oven to 375ºF.
- In a large bowl, mix together sugar, flour, baking powder, salt, and lemon zest.
- Using a pastry blender, cut in the butter and egg. {Dough will be crumbly.}
- Press half the dough into the bottom of a greased 9×13 inch baking dish.
- In a separate bowl, mix together the lemon juice, sugar, and cornstarch until well combined.
- Gently stir in the blueberries, just until mixed.
- Spread the blueberry mixture evenly over the crust.
- Top with the remaining dough mixture.
- Bake for 30-45 minutes or until the top of the crumbles are slightly browned.
- Let cool before cutting into squares.
