So, I’m part of a mom group on Facebook {Which I totally love. You should join one. Right now.} and for Valentine’s Day, we did a little gift exchange/swap thing where whoever wanted to participate was given a name and address and we had to send our person $10 or less worth of goodies or homemade crafts. I got mine in the mail and it was full of candies and treats from one of my very favorite candy shops from my hometown – Candies on Main. It included some white chocolate puff corn, which I inhaled within a couple hours. {Don’t judge.} I knew that I needed to recreate the recipe immediately! Luckily, one of my good friends, Shandi, worked for Candies on Main once upon a time and knew the basics to the recipe off the top of her head. Score. She kindly gave it to me and thus began my ever expanding waist line.
This stuff is the bomb. That’s all.
White Chocolate Puff Corn
Makes about 8 cups
Ingredients:
- 1 {3.5 oz.} bag Chester’s Butter Flavored Puff Corn {About 8 cups}
- 2 cups white chocolate chips
- 2 tsp. coconut oil {Or vegetable oil will work}
Directions:
- Place the puff corn in a large bowl.
- In a small bowl, combine the white chocolate chips and coconut oil and microwave on high in 30 second increments for 2-3 minutes, until chips are melted.
- Drizzle chocolate over the puff corn and fluff as you go, until puff corn is fully coated.
