I don’t know about you guys, but I’ve been on a soup kick lately. Let’s be honest, soups aren’t very manly. Need proof? Picture this:
Guys get together for Guy Day, Dude Night, Menrichment, Man Monday, whatever manly event where testosterone is plentiful… maybe they just went hunting/shooting/hiking and are coming back home, sweaty and tired. Maybe they went to the ball game and are hankering for some grub. Maybe they sat around all day comparing chest hair and relating manly stories that generated a healthy hunger. Whatever it was, imagine one of the dudes (think of Cam from Modern Family) clap his hands together and say, “all right boys, who’s ready for some fabulous tomato soup?”
Doesn’t quite fit, does it? Well, in-spite of that, I’ve been consuming a lot of soup lately, and I still feel manly. Why? Well, friends, I’m trying to shed a few pounds. The fam and I are going to Cancun in May and I don’t want to look like a fat blob when we go. What does this have to do with soup? Soup is incredible in many healthy ways. First, you can hide all sorts of veggies in a soup without it tasting veggie-like. Also, a warm soup can help you feel full for not a lot of calories. Nothing makes you feel more like a man when you look in the mirror and can do the peck dance. Eat soup, do the peck dance. Simple.
We have made this cauliflower soup before, but it was almost inedible because of how grainy it was. We were recently given a Wolfgang Puck Commercial Blender by Eastman Tritan™ and I can’t begin to tell you what a difference that a quality blender like this one made! It’s a commercial blender that quickly and {just as important} quietly whips up just about anything we need. One of the great things about it too, is that it doesn’t cost an arm and a leg. Yes, it’s more expensive than your typical Walmart blender, but it also does the job way better than them, and it can hold up against the pricey $400 blenders as well. The jar is made with Tritan™ plastic from Eastman, which is nice, durable plastic, so while it looks fancy, you don’t have to worry about dropping it and shattering it into a million pieces.
Zupas Wisconsin Cauliflower Soup Copycat
Ingredients
- 1/4 cup {1/2 stick} salted butter
- 1 medium white onion diced
- 1/4 cup all-purpose flour
- 1/2 tsp. salt
- 1 cup milk {I use 1%}
- 1 cup half and half
- 1 & 1/2 cups water
- 1 {14.5 oz} can chicken broth {I use salted}
- 2.5 lbs cauliflower {about 1 head} roughly chopped
- 2 tsp. dijon mustard
- 1/2 cup pepper jack cheese shredded
- 1 & 1/2 cups cheddar cheese shredded {I use mild}
- {Optional} Bacon bits
Instructions

Melt butter in a large saucepan, over medium heat. Add onion and let cook until translucent, about 10 minutes.

Add flour and salt and mix well. Let cook for another two minutes.

Add milk, half and half, chicken brother, and cauliflower and bring to a boil over medium high heat. Cover and reduce heat to low and let simmer for about ten minutes, until cauliflower is tender.

Put soup in your Wolfgang Puck Commercial Blender and pulse until all the cauliflower is blended and soup is desired consistency.

Place back in saucepan and heat until hot. Add mustard and cheeses and stir until the cheese is completely melted. Top with extra cheddar cheese and bacon bits, if desired.
The great thing about this soup is you can adjust the health level by altering a few steps. Instead of half and half, use milk. Reduce the cheese by half to cut calories, etc. If you aren’t concerned in the least by health and just want a delicious meal, follow the recipe as is. Even as is, the recipe ain’t bad for you. That’s why soup is great. However you do it, just enjoy.
