These Breakfast Quesadillas are a combination of cheese, egg, bacon green pepper, and onion, slapped between two tortillas. They are easy to throw together and are a delicious tasting breakfast!
You guys. I can’t stop thinking about these Breakfast Quesadillas. I know. It seems like a silly thing to not be able to get off your mind, but it’s for good reason.
These quesadillas have all of your favorite breakfast items, packed together between two tortillas. That, alone, would be delicious, but the best part is that you cook the tortilla in the bacon grease. #mindblown
This makes the tortilla crisp and flaky and that right there is what I can’t stop thinking about. The cheesy goodness is just the cherry on top.
I actually made these this morning for breakfast again. I asked Zach if he wanted one and he declined. Weirdo. I offered him a slice of mine when it was done cooking and after one bite, he jokingly asked why I didn’t make him one, too. He said they were the best breakfast he has ever had! And that, my friends, is how you win the hearts of a man. I hope you enjoy these as much as we do!
Breakfast Quesadillas
Ingredients
- 8 eggs
- 1/2 green pepper chopped
- 1/2 white onion chopped
- salt and pepper to taste
- 6 bacon slices
- 2 cups cheddar cheese
- 8 small flour tortillas
Instructions

Heat a large skillet over medium-low heat.

Crack the eggs into a medium-size bowl and whisk until smooth.

Add green pepper, onion, salt, and pepper and whisk together. Pour into the heated skillet. Cook until eggs are no longer runny, stirring often. Set aside.

Heat another large skillet over medium-low heat and cook bacon slices in it. Place bacon on a plate covered with paper towels. Pat down to get rid of excess oil.

Chop the bacon into pieces and add to the egg mixture.

In the same skillet that you cooked the bacon in {keeping the excess grease!}, place a tortilla in it, top with 1/2 cup cheese, and then 1/4 of the egg mixture. Top with another tortilla.

Fry until golden brown and then flip. Fry other side until golden brown.

Cut into fourths and serve with salsa or sour cream.
