So, I don’t know if you know this, but Zachary has 6 brothers and 1 sister. Yeah. He has a pretty big family. While we were in Utah a few weeks ago, we all got talking about our want to lose weight and be healthy, so we started a “Biggest Loser” competition. We made a Facebook group where we post our weight every Monday and we will do this every week until Thanksgiving day when we will decide on a winner. It’s based off of the percentage of weight loss, just to keep things fair. Anywaaaaay, to make a long story short, Zachary and I have been on the prowl for some healthy {and still delicious} recipes. We’ve found a few and let me tell you peeps – this is one of them. It’s about 350 calories per serving and the servings are pretty generous. And it actually fills you up. Score!
Skinny Lemon Chicken Rice
Recipe from Skinny Mom
Makes about 4 servingsIngredients:
- 1 cup rice {I prefer white because the texture turns out better, but feel free to use brown if you’d like!}
- 2 cups low sodium chicken broth
- 1 Tbsp. butter
- 2-3 cloves garlic, minced
- 1 tsp. red pepper flakes {optional}
- 1 lb chicken, shredded
- Juice from 1 lemon
- 2 Tbsp. fresh cilantro, chopped
Directions:
- In a large pot, combine rice, broth, butter and garlic and bring to a boil.
- Reduce heat to low and add in red pepper flakes and cover.
- Let simmer for 15-25 minutes or until rice is desired texture.
- Add chicken, lemon juice, and cilantro and mix well.
- Cover for another 3-5 minutes and serve warm.
