Pomegranate Energy Bites

Ingredients
- 6 Tbsp. POM Wonderful 100% Pomegranate Juice
- 1/2 cup almond butter
- 1/4 cup ground flax seed
- 1/2 cup coconut {I use sweetened}
- 1/8 cup honey
- 1 1/2 cups old-fashioned oats
- 1/4 cup mini chocolate chips
- Fresh pomegranate seeds {Optional}
Instructions

In a medium bowl, combine juice and almond butter until a thick paste is formed.

Add flax seed, coconut, and honey. Stir until well combined. Add oatmeal and mix well.

Add in chocolate chips and pomegranate seeds {if using} and mix carefully, until evenly distributed.

Form into 1 & 1/2 inch balls and place in refrigerator for 20 minutes to let firm up. Enjoy!
