Welcome to this week’s Easy Meal Plan!
We spent the whole day, yesterday, in Estes Park, Colorado. We had big plans to go for a beautiful hike and got about half a mile up the trail, when Addi squatted anddropped a hot and heavy one. Us, being the great parents we are, totally forgot a diaper in our backpack and I don’t know about you, but hiking with a stinky toddler is a no-go. So, that was the end of that. We ended up going back into town and gorging ourselves in food that wasn’t really even that good and got home way too late. Believe it or not though, we still had a blast! Which goes to show – it’s not what you do, it’s who you’re with. I hope you have had a wonderful weekend, too! Hopefully this easy meal plan will help make your week even better. {And less stressful!}
