For you noobs who haven’t read our “about the blog” page, let me give you a quick recap. Three days into our marriage, Sarah and I made our first meal as domesticated folk: Chicken a la King. For this reason, Chicken a la King will always be special to us, and we’ve made it a tradition to make it every New Years Eve.
Chicken a la King
This Chicken a la King is the ultimate comfort dinner recipe! It's warm and creamy and is best served over toast.
Ingredients
- 1/4 cup butter
- 1/2 cup chopped green bell pepper
- 1/3 cup chopped onion
- 1/2 cup chopped mushrooms
- 1/4 cup all-purpose flour
- 1 & 1/2 cups milk
- 1/2 cup chicken stock/broth
- 1 lb cooked chicken chopped
- 2 oz jarred pimiento peppers chopped
- 1/4 tsp garlic powder
- 1/8 tsp red pepper flakes
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions

Melt your butter in a large skillet. Add the bell pepper and onion and saute for about 4 minutes.

Add the mushrooms and continue cooking for an additional 2-3 minutes.

Add the flour and whisk together. Cook for 1 minute.

Add the milk and chicken broth and stir well.

Bring the mixture to a boil while stirring frequently. Once boiling, reduce the heat to low.

Add the cooked chicken, pimiento peppers, garlic powder, red pepper flakes, salt, and pepper, and mix well.

Serve over toast or rice.
Sarah and I like to serve this stuff right over the top of some toast (French bread is best!). If you want to take a less easy route, you can serve it over rice or noodles.

Delicious! Served it over toasted ciabatta bread because that’s what I had. Family lapped this stuff up! Making my keep list as a rotation. Super quick on a work night. you prep chicken the night before.
