I have to admit that when I first read the recipe for this 8 Can Chicken Taco Soup, along with the title, I literally laughed out loud. All by myself in my kitchen. {Because I’m cool like that.} How stinking clever is this? You add 8 different cans of stuff together and you get one insanely delicious soup. That’s genius! I definitely can’t take credit for it though. My sister-in-law, Jodi, was the person who gave me this recipe and it has quickly become a favorite for both Zachary and me!
I have a different recipe for taco soup that I’ve loved making for a while now, but it is seriously nothing compared to this. And my old recipe is twice as much work too! Weird. At less than 300 calories per cup, this stuff is awesome. You wouldn’t think a cup would be very much, but I can barely finish it. It’s so good!
I have a feeling I’m going to be making this soup a lot when the winter months roll in. Not only does it warm my body, but it warms my soul! 😉 Enjoy.

8 Can Chicken Taco Soup
Just throw together 8 cans of food to make this easy, quick, and delicious chicken taco soup that your whole family is sure to love!
Ingredients
- 1 can black beans drained and rinsed, 15 ounces
- 1 can pinto beans drained and rinsed, 15 ounces
- 1 can petite diced tomatoes drained, 14.5 ounces
- 1 can sweet corn drained, 14.5 ounces
- 1 can white chicken breast drained, 12.5 ounces
- 1 can cream of chicken soup 10.75 ounces
- 1 can green enchilada sauce 10 ounces
- 1 can chicken broth 14 ounces
- 1 oz taco seasoning I prefer McCormick mild taco seasoning
Instructions

Mix all ingredients together in a large pot.

Bring to a boil over medium heat and then reduce heat and let simmer for 5-10 minutes.

Serve with tortilla chips.

I do something very similar to this recipe and I use a packet of ranch AND a packet of taco seasoning! Haha. But I use ground beef.

I just made this in the crock pot and it turned out great! I put it on low and checked on it after about 3 hours and it was perfect for me. The beans were REALLY tender. If you like them a little more firm, decrease the time. It was great.

I have been making this for years as well. So tasty! I have played around with modifacations such as I add low-fat refried beans and often dump half or a whole jar of salsa in for more flavor. Then serve with sprinkled mexican cheese on top and sour cream with tortilla chips on the side to dip/scoop or crunch in 🙂

I would say, skip the chicken, use cream of mushroom (if you are not vegan), and either veggie broth or just plain water if it’s needed….

I make this same soup, but also add a package of ranch dressing. I keep shredded beef and shredded chicken in the freezer. You could also add meatballs.

Honestly, if you don’t like the enchilada sauce, I would just leave it out. I’ve done it without it before because I forgot to buy the sauce and it still tasted fabulous!! 🙂

I substituted a couple things and it turned out great! Vegetable broth in place of chicken broth, cream of onion soup instead of cream of chicken, and then added cooked salad shrimp. It was delicious!

So easy and inexpensive. I forgot the taco seasoning mix at the grocery store so just added some papkria and cayenne, but first I sauteed chopped onion and minced garlic then added a can of refried beans, black beans, corn and petite tomatoes. Then used equal parts chicken stock and chicken broth-did not use the cream of chicken, then added the can of chicken breast. I let it simmer on the stove for a good three hours. Served with sour cream, shredded cheese, chopped peppers, and corn bread muffins. Will def. make again. Thanks for the recipe!

I am in love with this recipe…I found it on Pinterest and I’ve made it about 5 times in the past month because it is so delicious! I’m personally not a huge fan of canned chicken so I just cut up one large raw chicken breast into bite-size pieces and cook it in the pot with some non-stick spray before I add the rest of the ingredients. It makes a really big pot of soup (somewhere around 2.5 quarts – or 10 cups – if the measurement in my pot is accurate).

Found this on Pinterest! We’re having this tonight. I threw it all in the crock pot and have it on “warm”. A couple of hours before dinner, I’ll turn it to “high” to heat through. I tasted it cold and it was delish, so I can only imagine how good it will be served hot with sour cream and cheese. I’m also making corn bread to go with it. Minus the corn bread, the entire meal cost me about $8… not bad to feed a family of four. Thanks for a great, easy meal that is delicious!!

A similar recipe from WW years ago was only 1 point for 1 cup. I realize they changed to a *new* point system so not sure what it would be now. We used a total of 3 cans of beans (kidney, white, pinto, black or whatever you like);1 can of whole kernel corn; 1 large can of diced tomatoes (28 oz); taco seasoning pack and a ranch drsg seasoning pack. That’s it. No soup, no chicken, no broth. Keeps the calories down but those additions sound so good, I might have to change up my tried and true WW recipe. Thanks for the recipe. BTW we never rinsed, just dumped everything in. Since I have developed high blood pressure, I use the organic, no salt beans and corn.

Just made this tonight with some improvisations.
Did not add the cream of chicken or chicken breast
Did add: diced green peppers, sweet peppers, hot green chilis, garlic, and cilantro.
Makes a ton of soup! Which is awesome. I plan on freezing it and eating it over the next few months (being a singleton, stuff like this lasts a while!)

I saw this on Pinterest and made it last night. So quick n easy, delicious, and VERY filling! I used two cups of water and two chicken bouillon cubes instead of the broth, and threw it all in the crock pot on low for about four hours. YUM!! Will definitely make again! Thanks for sharing!

AMAZING recipe, thanks for sharing it. So easy and just delicious. We used Progresso Hearty Tomato Soup instead of the tomatoes called for because that’s all we had in the cabinet, added 1 can of white beans (sorry we made it 9 can soup I guess), added 1 more can of chicken (because we love chicken) and served it with chopped Cilantro, broken up store bought Tortilla chips, lime wedges and sour cream….YUMMY!

I enjoyed the flavors of this soup, but found it VERY salty. I added it all up (because I’m doing MyFitnessPal and wanted to log it properly) and each serving has 2,082 mg of sodium per serving (suggested amount per day is 2500 mg or less) … and I used low sodium taco mix! If I make it again, I will use lower sodium everything. Just wanted to give people a heads up in case sodium is something they watch.

Made this soup for the first time today thinking it would be good to have on hand with an impending “snow/ice storm” coming this weekend. IT WAS AWESOME. I am not a lover of spice (but hubby and 1 kiddo are). I could it the soup and loved it…they went bonkers for it (and of course could add hot sauce to their hearts content). So so so good. My original plan was to have enough for lunch leftover for tomorrow…but I can already tell it will be gone by the end of the night today…it’s THAT good!

Another great substitution is to add a can of garbanzos instead of pintos. Pintos add richness but they are smooshier, we like the added texture of the garbanzos.

I made this last night and it was a hit. I did tweak it a little… I chopped some onions and cooked them with garlic, then added the canned ingredients. I substituted Rotel tomatoes for the plain tomatoes and did not drain them. I accidentally bought red enchilada sauce instead of green. And I added cumin, chili powder and black pepper with the taco seasoning. Nothing ever has enough flavor for my husband so I knew it would need some extra umph… He loved it! He didn’t even add Tapatio which says a lot!

We had this for dinner tonight and enjoyed it a lot. I didn’t notice that the recipe said to drain the tomatoes until I was putting the recipe in my book, but it didn’t hurt anything to have that juice in the soup. The tortilla chips in the soup were a great touch.

The recipe was super easy to make and tasted sooo good! I love that all I had to do was open some cans and throw everything into a pot. The hardest part (which wasn’t even hard) was draining the liquid out of some of the cans before adding them to the pot with the rest of the ingredients. I was worried about the consistency of the soup being too runny but once I added the taco seasoning everything thickened up and was perfect. Once I had the soup in my bowl, I added sour cream & shredded cheddar cheese on top and then ate everything with corn chips. Delicious flavor and my husband and I will definitely try this again! Also, this would work amazing in a slow cooker as well. I think it would cook fine on low for 3 hours.

This soup is delicious as the recipe is written. Totally loved it! The second time I made though I used diced tomatoes with green chilies and diced up refrigerated fajita chicken instead of canned chicken and it was so flavorful and delicious! Just as easy too!

I started making this in college 10 years ago for my roommates and I, and I still make it regularly! Making it for a potluck this week. I typically boil and shred chicken breast with seasoning/onion/lemon/herbs thrown in the pot, and sometimes I can’t find cream of chicken soup where I live, but it always turns out amazing!

Great recipe! My husband and I like spicy Mexican food so I used Fire roasted diced tomatoes and Red Enchilada sauce. It was delicious!

I’ve made this recipe many times. We love it! It’s a recipe you can make your own. I use unsalted stock and if I use store bought canned beans & tomatoes, I try to find unsalted or low sodium. I don’t use the canned soup, but sometimes I use fat free refried beans. Great soup!

One of my family’s all time favorite recipes. Doesn’t get much easier. The only modification I make is using fresh chicken.
