I have to be completely honest here. In our house? We are a couple of cereal people, through and through. We always have at least 7 or 8 different boxes of cereal in our home at one time and when I’m spacey and don’t plan ahead for dinner – cereal becomes our default meal. We love it! The only time we don’t usually eat cereal for breakfast is when we have company or on birthdays. {Because birthdays always call for something fancy.} If I could pick one breakfast to eat besides cereal though, it would involve this breakfast burrito recipe, hands down.
My mom makes the best breakfast burritos in the world! In fact, she’s the one that made these exact ones. {I love being spoiled on family visits.} They’re super simple and probably don’t even need a recipe, but I thought I’d share my favorite way to make them anyway.
Breakfast Burritos
This is the best breakfast burrito recipe ever! It's flavorful, so easy to make, and makes a good amount of filling. Wrap the extras in tortillas to freeze for an easy breakfast later.
Ingredients
- 5 lg. potatoes peeled and diced {They should be about 1 cm. in diameter.}
- 1 lb. sausage roll
- 8 lg. eggs
- 1 & 1/2 cups shredded cheddar cheese
- 10 8-inch flour tortillas
- Lowry's seasoned salt to taste
Instructions

Heat a large griddle on medium-high and spray with cooking spray.

Once hot, add the potatoes in an even layer. Sprinkle with seasoned salt and let cook until soft, flipping regularly.

While the potatoes are cooking, heat a medium frying pan over medium-high heat and add the sausage. Cook until no longer pink. Set aside.

Heat a large frying pan over medium heat. Whisk the eggs together in a small bowl and add seasoned salt, to taste. Pour the eggs in the frying pan and cook until slightly runny.

Add the sausage, cheese, and potatoes to the eggs. Mix together well and keep in the pan until the cheese is completely melted.

Warm the tortillas by heating a stack of them in the microwave for 30-60 seconds.

Assemble each breakfast burrito by placing 3/4 cup of filling in the middle of each tortilla. Fold over one side of the tortilla and roll until a burrito is formed.

Serve with a great-tasting salsa.

I sometimes add cilantro & Chorizo ( it’s a Mexican sausage) in my breakfast burritos.
I found this site on line with lots of Mexican recipes. One particularly being a recipe for Chorizo.
Coming from the Phoenix area, my dad was a butcher and he used to make his own, but none of us were smart enough
to get it before got Alzheimer’s. So that’s a recipe lost. But I did find this one.

Mexican Chorizo Sausage recipe
Serves 6 to 8
Ingredients
(2 -lbs.) Lean Ground Pork ( my dad used 1/2 hamburger and 1/2 pork , I do remember that back in the 50’s when hamburgers tasted like they should be)
1/4 Cup of Red Wine Vinegar
1- (3-oz.) Tampico Chorizo Mix- (for hotter mix throw a pinch of chili flakes like you get with your pizza sometimes)
Directions:
Combine all ingredients in a bowl. Work the mixture until the seasoning
is evenly distributed Cover tightly and refrigerate three to 4-hours.
When ready to use make into sausage rolls. (Cut into slices after partially frozen. I place them into
plastic wraps, then place them in freezer- zip-lock baggies)
