These Banana Nutella Streusel Muffins are a great way to use up leftover bananas and taste amazing! They make for a great dessert or breakfast and the Nutella and streusel add to the perfection.
I was at my parents’ house back in April and if there is one thing you should know about my family, it’s how much we all love fruit. {You would think that would help me out in the whole dieting area, but trust me – it doesn’t.} When we go home to visit, you can guarantee that there will be a basket full of fruit on the counter and three jugs of juice in the refrigerator. That seems to be our happy spot, I guess.
While I was there, I noticed a huge bunch of bananas that we are their way out. At the same time, my brother whipped out a huge-a$$ jar of Nutella and started eating it by the spoonful. I’m sure you can already imagine where this is going. I mean, I did kind of give it away with the title of this post and all, so you can’t take all the credit. 😉
Basically, these babies are the bomb.com and will leave you wanting your bananas to become overripe. Enjoy, my friends!
Banana Nutella Streusel Muffins
Ingredients
- Muffin:
- 1 & 1/2 cups all-purpose flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. nutmeg
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 1/4 cup light brown sugar
- 1/2 cup white sugar
- 3 very ripe bananas mashed
- 1 large egg lightly beaten
- 1 tsp. vanilla extract
- 1/3 cup butter melted {I use salted}
- 1/2 cup Nutella
- Streusel:
- 1/4 cup flour
- 1/4 cup brown sugar
- 1/4 tsp. cinnamon
- 2 Tbsp. butter {I use salted}
Instructions

Preheat oven to 375ºF. Line muffin tin with muffin cups and set aside.

In a large bowl, mix the flour, baking soda, baking powder, nutmeg, cinnamon, and salt.

In another bowl, mix together the bananas, sugar, egg, vanilla, and butter.

Add the banana mixture to the flour mixture and stir, just until moistened. Spoon the batter into the prepared muffin tins, about 2/3 of the way up.

Heat the nutella in the microwave for about 30 seconds, just to soften it up and make it a little runnier. Spoon about a tsp. of Nutella atop each muffin and swirl it with a toothpick to mix it in.

Bake for 12-13 minutes.

Meanwhile, in a small bowl, mix together the flour, brown sugar, and cinnamon. Cut in the butter with a pastry blender or fork.

After your 12-13 minutes are up, sprinkle the streusel on top of the muffins and continue baking for another 5-7 minutes, or until an inserted toothpick comes out clean.
