Zach and I kind of had a bake off a couple weeks ago. It was a Sunday morning, which are my favorites because he’s actually home when I wake up and we were both wanting something for breakfast other than cereal. {Which doesn’t happen often in this house.} We thought to make some kind of egg-y yumminess, but we were torn on how to do it. I wanted it to be simple with eggs, potatoes, and peppers and he wanted to make something more of a quiche, with mushrooms, tomatoes, and sausage. Yuck.
Sooo, we may or may not have had kind of a duel. I honestly don’t know if Zachary knew it was a competition, but beast mode was fully on for me. Long story short, I won. Zach even said that he liked his creation, but he liked mine a little more. #winning. I was super proud because these little babies tasted delicious and I whipped them up out of my very own head!
Breakfast Bites
Makes about 12 bites
Ingredients:
- 1/2 bag tater tot rounds
- 6 eggs
- 1 red pepper, chopped {or to add some color variance, I did half a red pepper and half an orange pepper.}
- 1 green onion, chopped
- Salt and pepper, to taste {Or I prefer Lowry’s seasoned salt}
Directions:
- Preheat oven to 350ºF.
- Place the tater tot rounds in a single layer on a plate and microwave for 1 and 1/2 minutes. {Tater tots should be somewhat malleable. Not frozen anymore.}
- In a muffin, tightly pack about 4 tater tot rounds in the bottom of each cup.
- In a medium bowl, combine eggs, pepper, green onion, and salt and pepper and whisk until combined.
- Pour egg mixture on top of tater tot rounds.
- Bake for about 10 minutes. {More or less, depending on your oven.}
I prefer to eat mine with a little salsa. Just a suggestion. 🙂 Enjoy!
