I’ve seen a lot of recipes for fudge floating around lately. My friend Jocelyn, from Inside BruCrew Life has a ton of yummy looking ones! I want to eat them all. I’ve always been intimidated by fudge. I tried to think about the reasons behind that and I think that it boils down to the fact that all the ritzy confectionary shops that you visit always have fudge. So, it seems easy to assume that if the fancy places have it, it must be hard to make, right? Wrong. Oh, so wrong. I was floored at how easy this recipe was! I was even more floored at how awesome it tasted. I ate so much of the first batch that I had to make another to have enough to send around to our friends. Embarrassing, I know. Which is also why I bought a gym membership this week, so no judging! This fudge and the salted caramel shortbread cookies that went into the goodie bags as well are going to be the death of me!
Cookies and Cream Fudge
Recipe from Lil’ Luna
Makes about 4 dozen fudge squares
Ingredients:
- 2 & 1/2 cups white chocolate chips
- 1 {7 oz.} container marshmallow fluff
- 1 cup granulated sugar
- 1/2 tsp. salt
- 1/2 cup {1 stick} salted butter
- 1/2 cup heavy whipping cream
- 20 oreos, crushed
Directions:
- Line a 9×9 inch pan with parchment paper, leaving some hanging over the edge and set aside.
- In a large bowl, combine white chocolate chips and marshmallow fluff; set aside.
- In a medium saucepan, melt together the sugar, salt, butter, and whipping cream over medium heat.
- Bring to boil and let cook for 5 minutes.
- Add butter mixture to chocolate chip mixture and beat until completely smooth.
- Fold in oreos and pour into prepared pan.
- Refrigerate for 2-3 hours.
