Okay, fine. I’ll admit it. I was a little deceiving in my post title. These tomatoes aren’t actually dried up from the sun. Don’t leave! Do you know how long it would take to make real sundried tomatoes? Literally, days. And that’s if you have full-sun and live in some place that’s blazing hot and dry like Arizona. I don’t know about you, but where I live, it has been raining for almost a month straight it feels like. In other words, it could take weeks for me to make legit sundried tomatoes. Ain’t nobody got time for that! Cue the glorious invention of the oven. Within just a few hours, you can have delicious sundried tomatoes all to yourself!
I feel the need to admit something else while we are getting all personal here – I hate tomatoes. I know, call me crazy. Believe it or not, people like me really do exist. I try them every year to see if things have changed and sadly, they haven’t. I want to like them, but it’s just not in the cards for my tastebuds.
Sundried tomatoes, on the other hand? Yum. I have recently experienced the joy of these little gems and I can’t believe how much I have been missing out! We especially love to throw a few into our Tomato-Basil Ravioli, but eating them plain is just fine, too. Addi loves them also, which is a major plus! But, then again, she eats almost anything once it’s dried. Mango is currently her favorite. Maybe we will have to try our hand at that sometime. I’ll keep you posted. How to Make Sundried Tomatoes
Ingredients
- 2 lbs Roma tomatoes
- salt to taste
Instructions

Preheat oven to 200ºF.

Cut your tomatoes in half. Scoop out all of the seeds and throw them away.

Place the tomato halves on a baking sheet and salt them to your liking.

Bake for 8-10 hours, depending on how quickly your oven dries them out. You want the tomatoes to take on a leathery texture.

Use as desired. Store in refrigerator.
