Let’s be real – dessert is the best part of any meal. I know you’re all thinking it, I’m just saying it. This Chocolate Caramel Ice Cream Pie mixes two fabulous desserts to give you one double fabulous dessert. {See what I did there? 1 fab dessert + 1 fab dessert = one double fab dessert. There’s your math lesson for the day. No thanks needed.} I’ve been wanting to try this Ice Cream Pie ever since I saw it in a cookbook that we received for our wedding, years ago, and I just now got around to doing it. Let’s just say that I missed out on a lot by waiting this long.
If I could have one wish in life, it’d probably be to be able to eat ice cream every day without getting fat. I love it! My favorite is cookies and cream, but I used vanilla for this recipe. It did not disappoint.

Chocolate Caramel Ice Cream Pie

Ingredients
- 2/3 cup light brown sugar packed
- 1/3 cup butter melted, I use salted
- 1/2 cup coconut flakes
- 2 cups cornflakes crushed {measure, then crush}
- 1 quart vanilla ice cream softened
- Chocolate ice cream topping
- Caramel ice cream topping
Instructions

Mix all ingredients, except ice cream, in a medium-sized bowl and combine well.

Press into the bottom and sides of a 9" pie plate and place in the freezer for 30 minutes.

Fill the crust with softened ice cream and place back in the freezer for 1.5 hours.

Drizzle chocolate and caramel over the top and enjoy.
