I’ve never been one that’s like, “Oh my gosh, I just LOOOOVE tacos!!!!!!!!”, but at the same time, they’re probably one of the easiest meals on the planet. Which is why I love this recipe. Because let’s be honest, anything in bite size form is way better than regular sized. I like to cook the meat and keep some in my fridge, so I can whip these babies up on a moment’s notice. They’re so easy and would do great for dinner as well as a party appetizer!
Mini Taco Cups
Makes about 4 dozen cups
Ingredients:
- 1 lb. ground beef
- 1 bag burrito-sized tortillas
- Cheese
- Lettuce
- Tomato
- Avocado
- Olives
- Sour Cream
Directions:
- Preheat oven to 375ºF.
- Brown the beef and season as you like. {I prefer to use an Old El Paso mild seasoning packet.}
- Using a 3-inch biscuit or cookie cutter, cut out 7 circles from each tortilla.
- Shape the tortilla rounds into cups in a mini muffin tin.
- Spoon 1/2-1 Tbsp. beef into tortillas.
- Top with cheese and bake for 8-10 minutes or until the tortillas begin to brown slightly.
- Remove from oven and top with lettuce, tomato, avocado, olives, and sour cream. {Or whatever taco toppings you prefer!}
