I so love easy meals and this One Pan Cheesy Chicken Broccoli Rice Casserole is SUCH an easy meal, my friends. As an added bonus, my kids ate it like champs too. {It could be because of the gobs of cheese, but hey, they ate broccoli and chicken too, so I’m not complaining.} It has become a go-to meal in our house and I love it!
I have been in kind of a dinner slump lately. I used to love dinnertime. I enjoyed getting all of my ingredients together, cutting up the vegetables, sneaking little tastes here and there, and the smells! Oh, the smells. I was dang good at making dinner often and making it well.
A few weeks ago, I was thinking about where that Sarah went, and then it hit me, “That Sarah was newly married, didn’t have a job, and didn’t have any kids either.” Oh. That explains it. It’s crazy how life just runs away with you and you don’t get to truly focus on all the things all the time.
Don’t worry, I am totally okay with this. I would rather have those two sweet kids of mine and a food blog to keep me busy than to have time on my hands to enjoy making dinner. But, who is to say you can’t enjoy life AND dinner? I think that’s why I appreciate easy meals like this One Pan Cheesy Chicken Broccoli Rice Casserole so much and honestly, just the concept of “one pot” meals in general. It feels so good to make something that is delicious but doesn’t take a lot of effort or time away from my family. It’s a real win-win in my book.

This One Pan Cheesy Chicken Broccoli Rice Casserole can be thrown together in minutes, with minimal ingredients needed. It is such an easy dinner recipe that will become a family favorite meal!
Ingredients
- 2 Tbsp. olive oil
- 1/2 white onion diced
- Salt and pepper to taste
- 1 lb. boneless skinless chicken breast trimmed and cut into bite-sized pieces
- 1 tsp. garlic minced {about 2 cloves}
- 1 cup uncooked extra long grain rice rinsed
- 2.5 cups chicken broth
- 2.5 cups broccoli florets cut into bite-sized pieces
- 2 cups cheddar cheese shredded and divided
Instructions

Heat olive oil in a large skillet over medium heat.

Add onions and sauté until softened.

Turn up heat to medium-high, salt and pepper chicken, then add chicken to pan.

Cook chicken until no longer pink inside, then add garlic. Cook for 1 minute.

Add rice and chicken broth to the pan and bring to a boil. Reduce heat, cover, and let simmer for 12 minutes.

Stir the broccoli into the rice mixture, cover, and let simmer for another 8 minutes, or until broccoli and rice are both tender.

Add 1/2 cup cheese to the rice mixture and stir until melted.

Sprinkle the remaining cheese over the dish and cover for 2-3 minutes, until cheese is fully melted.
