I’ve always loved fruit, but since becoming prego? Times that love by like, ten. Take this last Christmas for example – I was working at a pharmacy and weirdly enough, people thought it was cool to bring fruit trays in as gifts. {What happened to all the cookies and candy??} I definitely couldn’t complain though. At that point, fruit was about the only thing I could keep down. I’m pretty sure that I single-handedly ate all the pineapple that went through that place. Even now, at 36 weeks {holla!}, I would choose fruit over any other kind of food. Which is why I am in love with this fruit salsa! And what’s even better, is it goes perfect for the upcoming 4th of July! I just adore cute, festive things.
Patriotic Fruit Salsa with Cinnamon Chips
Makes 4-6 cups
Ingredients:
- 1 lb. strawberries, diced
- 1 lb. blueberries
- 3 medium Gala apples, diced
- 2 Tbsp. white sugar
- Fajita-size tortillas
- Butter
- Cinnamon sugar
Directions:
- In a large bowl, mix the strawberries, blueberries and apples together.
- Sprinkle the sugar over the fruit and mix well. {Make those babies sweat!}
- Let chill in the refrigerator.
- Meanwhile, preheat the oven to 350°F.
- Spread a thin layer of butter on one side of each of the tortillas.
- Cut into six slices {a pizza cutter works great!} and place on a baking sheet.
- Sprinkle with cinnamon sugar.
- Bake for 8-10 minutes.
- Serve with chilled fruit.
Note: I didn’t put measurements on the tortillas, butter, and cinnamon sugar, because it really is all dependent on how many you want to make.
This does make a lot of salsa, so I recommend taking it to a 4th of July BBQ to share. Otherwise, you’ll end up like Zachary and I and eat half the bowl yourselves. I figure there are worse things to overeat on, right??
