Peppermint Meringue Cookies
These Peppermint Meringue Cookies are fairly easy to make and are extremely cheap! The recipe makes a ton and is a delicious Christmas treat!
Ingredients
- 3/4 cup sugar
- 3 large egg whites
- 1/2 tsp. peppermint extract
- Red gel food coloring
Instructions

Preheat oven to 175°F.

Line 2 baking sheets with parchment paper.

Fit a pastry bag with a small star tip; Set aside.

Combine sugar and egg whites in a heatproof bowl.

Set the bowl over a pan of simmering water, stirring gently until the sugar is dissolve and the mixture is warm to the touch. (I put a cookie sheet over a pot and put the bowl on top of the cookie sheet and it worked like a charm.)

Place the egg whites in a larger bowl and mix on medium-high speed with a wire whisk until stiff peaks form.

Mix in the peppermint extract.

Using a small paintbrush {or, if you're like me - your finger} paint 2-3 red food coloring strips inside the pastry bag.

Fill the bag with the meringue.

Pipe small star-shaped dollops onto your prepared baking sheets. (Refill the bag as necessary, painting stripes each time.)

Bake for about 1 hour and 40 minutes, until the cookies are crisp.

Let cool completely on wire cooling racks.
