Is it snowing where you’re at? It finally just slowed down here, but my husband said that on the way to work this morning, there were 4 cars off the road and another car rolled over. Yikes. I think I’ll stay in today and have a nice, big cup of this hot chocolate!
If you know me, you know I’m a white chocolate nut. I’d prefer it over regular chocolate any day! Then add peppermint to the mix and I am set. This stuff tastes like Christmas in a cup to me and the homemade whipped cream sure tops it all off!
Peppermint White Hot Chocolate with Peppermint Whipped Cream
Recipe from Epicurious
Makes 4 servings
Ingredients:
- 2/3 cup chilled heavy whipping cream
- 8 hard peppermint candies, coarsely crushed {I put mine in a zip loc baggie and used a meat tenderizer to crush them.}
- 3 & 1/2 cups milk {I used 1%}
- 8 oz. Ghirardelli white chocolate, chopped {Or other good quality white chocolate such as Lindt}
- 1/2 tsp. peppermint extract
- Additional peppermint candies, coarsely crushed
Directions:
- Beat cream and 8 crushed peppermint candies in a medium bowl until stiff peaks form.
- Cover and refrigerate.
- Meanwhile, in a medium saucepan, bring milk to a simmer over medium-high heat.
- Add chocolate and stir until melted and smooth.
- Bring to a simmer again, stirring constantly.
- Remove from heat and add peppermint extract.
- Pour into mugs and top with whipped cream and crushed peppermint candies.
It doesn’t do well if left to sit, so be sure to serve it warm right away! I hope this makes your day merry and bright! 🙂
