Today’s post comes from some girls that I hold near and dear to my heart. Say hello to Pass the Fresh!
We are thrilled to be teaming up with Sarah and Zach for this post! It just feels right.
“Pass the Fresh” is a joint blog of four sisters (2 sisters and 2 sisters-in-law), though with our history with Sarah it feels like she could make five. When our family moved down to central Utah while one of us (Kaitlyn) was in middle school, Sarah instantly became an adopted member of the family when she and Kaitlyn became BFF’s. They were pretty much inseparable for years, and we treated her just like one of our own family (which, for us and our 4 brothers, means she got teased relentlessly!) Of course, we were so cool that she wanted to be part of our family… but we didn’t realize that she would actually make that happen until she met our cousin Zach during a spring break trip with Kaitlyn. When she and Zach got married it felt like destiny that she would take on our last name permanently and truly become one of the family! We love it that she’s joined our ranks for real, and that we can now forever claim some credit for her marital bliss. (We did prep her for success by getting her accustomed to the family teasing tradition, after all! 🙂
“Pass the Fresh” is based on our shared dream that we can prepare awesome meals for our families that are also simple and healthy. The four of us range from no kids to several young kids at home, and we are all figuring out how to balance the demands of busy lives that still include healthy, home-cooked meals (and the occasional treat, of course!) With Thanksgiving this month, we wanted to share a special treat that we’ll be serving to our families for the holiday. This pumpkin pie parfait recipe incorporates all of our “simple, healthy, yum” goals: it tastes just like pumpkin pie – maybe even better, but it has less fat and calories and looks 100 times prettier. Your typical slice of pumpkin pie WITHOUT whipped topping is 323 calories, 14 grams fat, 42 grams carbs, and a whopping 21 grams sugar. These beauties have less calories and fat, half the sugar, and half the carbs. Yes, you read that right, HALF! So what are you waiting for? Put down the sugar-filled pie and treat yourself to a healthier version. Your dinner guests will thank you.

Pumpkin Pie Parfait
Makes 3 {8 oz.} parfaitsIngredients:
Parfait:
- 1 cup pumpkin puree
- 1/4 cup coconut cream pudding mix
- 1/4 cup coconut milk
- 3/4 teaspoon cinnamon
- 1 teaspoon vanilla
- 1/2 cup sliced almonds
- 1/2 cup raw cashews-finely chopped
- sweetened coconut flakes for garnish
Topping:
- 2 cups pastry pride non-dairy whipped topping (can be purchased at Funfinity or Costco)
- 2 teaspoons vanilla
Directions:
- In a blender combine puree, pudding mix, milk, cinnamon, and vanilla. Blend until smooth and put in the fridge for a few hours.
- In a separate bowl whip your pastry pride and vanilla together on high speed until stiff peaks form, about 3-5 minutes. Put it in a freezer for a few hours.
- Once the puree and topping have chilled for a few hours, you can assemble your creations in parfait glasses (ours were purchased at the dollar store) or even shot glasses for smaller serving sizes.
- Start by layering the pumpkin puree, then add some cashews and sliced almonds, then add your whipped topping, another layer of puree, more cashews and almonds, a small layer of whipped topping and add a sprinkle of coconut flakes. Keep refrigerated until served.
