I am always on the lookout for a fast, easy, healthy meal and this Skinny Gorgonzola Pasta with Sundried Tomatoes fits the bill for all three of those things.
I have made it a few times before and Addi always eats it right up. It’s made with cottage cheese and Greek yogurt, so you can imagine how low-calorie it is! When I was perusing Walmart last week, trying to gather up the ingredients to make it again, I saw that Ronzoni just came out with a new product – their Garden Delight Pastas.

Skinny Gorgonzola Pasta with Sundried Tomatoes
Ingredients
- 8 oz. Ronzoni Garden Delight Pasta
- 12 oz. low-fat cottage cheese
- 1/2 cup plain Greek yogurt
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/2 up {2 oz.} crumbled Gorgonzola cheese
- 4 oz. sundried tomatoes {not packed in oil}
Instructions

Cook pasta according to package directions. Drain and set aside.

Meanwhile, combine cottage cheese and yogurt in a food processor or blender and process until smooth and creamy.

Heat cottage cheese mixture, salt, and pepper in a large skillet over low heat.

Once warm, add the Gorgonzola cheese and heat until melted.

Add the pasta and tomatoes to the skillet and toss to coat completely.
