This spaghetti pie is a fun twist on your favorite classic spaghetti recipe. The crust is made of spaghetti noodles, butter, egg, and cheese, then it’s topped with cottage cheese, a yummy beef mixture and topped with cheese. Even your picky eats will love it!

You guys know that I’m usually lighthearted, goofy, and/or facetious with my posts, and I don’t really plan on changing that any time soon. Yet, today I’m posting something special. Now, I don’t expect you to get out your tissue or anything, all I’m saying is this one means a lot to me.
So, 10 years ago this month my mom died. And you know what sucks? I mean, other than the fact that she’s not around anymore? Time, that’s what. TIME SUCKS! You know why? Because, here I sit, 10 years after she’s gone, and I can’t remember much about her. You’d think that the lady that loved me more than anyone else, who selflessly took care of me for 20 years – you’d think that I could just call upon a million memories of her. Well, I can’t. I mean, there will always be those special memories that I will cling to – but I miss the small memories. What did she say to me my first day of high school? What was her favorite fruit? Heck, what plans did she have for the summer that she never experienced? I can’t even remember what she smelled like… I can only guess.
So, you know how I stick-it to that old bugger Time, who robs me of so much? Well, stuff like this helps. Venting to an unsuspecting world helps. But, believe it or not, pondering the memories I DO still have helps me feel like I’m still in the battle against Time.
One of those memories? Spaghetti Pie!! My mom made spaghetti pie all the time. Unfortunately, I don’t have the exact recipe that she used, in fact, I don’t know if it even exists anymore. For all I know, the recipe was in her head only. But Sarah and I did our best to recreate it, and I will say, it’s rather impressive! So, here’s a tribute to mom!
Like a white knight on a battle field of glory, I bring forth my saber, named Spaghetti-Pius and strike down that old tyrant, Time! Though wounded, I leave this battle field feeling light-of-heart and happy for the memory of those who mean so much to me and who are fighting glorious battles in Heaven. Hmm, what’s that other feeling I have whilst leaving this field of battle? Fullness. Full, well, because I ate too much spaghetti pie. But I wouldn’t have it any other way.

Spaghetti Pie
Ingredients
- 1 lb. lean ground beef
- 1/2 cup chopped onion
- 1 cup canned petite diced tomatoes drained
- 1 {6 oz.} can tomato paste
- 1 tsp. salt
- 1/2 tsp. garlic powder
- 1/4 tsp. pepper
- 6 oz. spaghetti cooked and drained
- 1 Tbsp. butter melted {I use salted}
- 1 egg whites lightly beaten
- 1/2 cup grated Parmesan cheese
- 12 oz. low fat cottage cheese
- 1 cup mozzarella cheese shredded
Instructions

Preheat oven to 350ºF and grease a 9 inch deep-dish pie pan with cooking spray.

In a large skillet, cook the beef and onions over medium heat, until the meat is no longer pink. Drain fat and add tomatoes, tomato paste, salt, garlic powder, and pepper. Stir until all ingredients and combined and set aside.

In a large bowl, combine the spaghetti, butter, egg whites, and Parmesan cheese. Press into the bottom and up the sides of your prepared pie pan.

Spread the cottage cheese over the spaghetti. Top with the beef mixture, spreading evenly.

Bake, uncovered, for 20 minutes. Spread the mozzarella cheese evenly atop the beef mixture and bake for 5-10 minutes longer, until cheese is fully melted.

Let stand for 5 minutes before serving.

*Optional: Add 1/4 cup diced green peppers when cooking the meat and onions

I loved the spaghetti Pie recipe.
It looks great!
I did add more spices than the garlic.
This is what I added to the tomato paste. I use Tomato paste on mini pizza’s as well using flag bread
• 1- {6-oz.} can tomato paste (I would add spices to this ½ tsp. dried basil or
2 to 3 -sprigs chopped sweet basil fresh, ¼ tsp. of garlic
powder or smashed 1-fresh garlic clove, ½ tsp. of Italian seasoning dried,
½ tsp. of parsley, dried. Same amount for dill-1/2 tsp. (optional) You could
go to ¼ tsp. on all the seasoning mentioned above. It might be to over
powering to some people especially kids, otherwise.

circle around the Spaghetti crust.
