Are you ready for the best pasta salad you will ever have in your entire life? Never mind that it just so happens to be made with my favorite kind of pasta – the bow tie. The dressing also tastes absolutely amazing! My mother-in-law made this for the luncheon for Addi’s blessing and it was definitely a favorite among the peeps. So much so, that we were requested to bring it to a going away party for one of our friends last week and then I’ve had the recipe requested a few times since then. It’s seriously so good!
Spinach Bow Tie Pasta Salad
Makes about 18-20 servings
Ingredients:Dressing:
- 1 cup vegetable oil
- 2/3 cup Teriyaki sauce
- 2/3 cup white wine vinegar
- 6 Tbsp. white sugar
- 1/2 tsp. salt
- 1/2 tsp. pepper
Salad:
- 16 oz. bow tie pasta
- 6 oz. bag Craisins
- 3 {11 oz.} cans mandarin oranges, drained
- 1/2 cup parsley, chopped
- 1 bunch green onions, finely chopped
- 1/4 cup sesame seeds, toasted
- 6 oz. honey roasted peanuts, chopped
- 11 oz. bag of baby spinach
Directions:
- In a small bowl, combine all the ingredients for the dressing and whisk together until sugar is dissolved.
- Cook pasta according to directions.
- In a large bowl, pour the dressing over the pasta. Stir well and let sit in the refrigerator for two hours.
- Add the rest of the salad ingredients to the pasta and serve immediately. {If you aren’t going to serve right away, wait to add the spinach until just before you do serve it.}
*Additionally, you can add 2 {8 oz.} cans of water chestnuts and 2 cups cooked, chopped chicken, but I personally like it better without. 🙂
